Question: “i live in rural farmland in Kentucky and seem to have a problem with new trees (fruit, oak, and Japanese maples) having their new leaves slowly eaten by some insect that i can’t see.”
Suggestions – It can be difficult to suggestion a solution without being able to see the damage being caused by the insects and since you say you can’t see the insects you can’t even give us a description of the culprits …

Not sure if it will work for that but try cedar chips. I use it for all my insect needs. It gets rid of fleas, spiders, yard bugs and worms, and more. You soak cedar in a bucket for 24 hours, drain it then spray the water every where and sprinkle the chips where you want them. It makes a huge difference at our house.And it is cheap, like 8 for a bag of cedar that lasts all summer.

use lady bugs. You can order them on line….they look pretty but other bugs fear them….
Sounds like your plants are being attacked by something at night…maybe that's why you can't see what is doing the damage…. That happened to me!

try wrapping aluminum around the trunk. If it is a caterpillar they will not go up past the foil . It disorients them. It also stops some flying insects because of the way it refracts the sunlight.
Cheap easy, try it on one tree if it helps then do the others.
